Pasta with Walnuts Sauce

Pasta con salsa di noci is a traditional recipe from the Marche region of Italy.

Ingredients for 4 people:

  • 400 grams pasta
  • 100 grams shelled walnuts
  • 100 grams pecorino cheese
  • Basil
  • Olive oil
  • Salt

Preparation:

Boil the walnuts, remove the light skin and crush them in a mortar with a pestle, along with a generous amount of chopped basil and the pecorino cheese, slowly adding a bit of oil.

Boil the pasta and add the sauce when cooked.
